Swiss Steak Recipe
1 1/2 to 2 lbs grass fed sirloin steak or round steak
3 T extra virgin olive oil
1/4 C flour
1 lb fresh tomatoes or canned
1 Anaheim pepper (chopped)
1/4 C fresh cilantro (chopped)
1 t Celtic sea salt
1/4 t fresh ground pepper
Combine flour, salt, and pepper. Place meat between two layers of plastic wrap. Sprinkle with flour mixture and pound with meat mallet.
Brown on both sides in oil. Combine tomatoes, green pepper, onion in blender or food processor. Pour over meat. Cover and cook in 275 degree oven for 1 1/2 – 2 hours or until tender.
Serve the tomato gravy over rice.
